How to Make a Minnie Mouse Cake

There are plenty of recipes out there for making a Minnie Mouse cake, and everyone has their own tricks and techniques for making a great Minnie Mouse birthday cake. Some people swear by the boxed mixes, others swear by from-scratch recipes. Some bake the cake in a big pan and then cut it into different shapes, others use different cake and frosting colors to build everything up piece by piece.

But to get that authentic Disney twist, we have a new secret for you: use white chocolate ganache instead of frosting. It hardens into a firm shell that you can smooth just like frosting, but it tastes so much better! Best of all, you can use it with any color of candy coating applied on top, so your birthday girl can have whatever color she wants.

To make white chocolate ganache:

Melt 1/2 cup heavy cream in a saucepan over medium heat until small bubbles form around the edges of the pan, stirring constantly. Remove pan from heat and stir in 8 ounces coarsely chopped white chocolate chips until melted and smooth (you can also use a microwave to melt the cream and chocolate together). Refrigerate one hour or until cool enough to spread onto cake.
